Vegan Pumpkin Pie
Ingredients
- 1 15oz pumpkin puree
- 1 cup soy milk
- 1 Tbsp corn starch
- 1/2 cup oatmeal
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 3/4 cup sugar
- 1 large deep dish pie crust
Instructions

Put pureed pumpkin, brown sugar, spices, starch, oatmeal and non-dairy milk in your blender. Blend ingredients in your blender. Pour the contents from the blender in your frozen deep dish pie crust.

Preheat oven to 350 degrees F. Bake for for 45 minutes. Let the pie sit overnight before eating.
