Vegan Pumpkin Pie
These were how the first few pumpkin pies were made using canned pumpkin puree, brown sugar, spices and soy milk. There are different types of sugar you can use in pumpkin pie. I think brown sugar works well in pumpkin pie. Plain water or a nut based milk would taste better than soy milk in a pumpkin pie. It just depends what is already in your refrigerator and if you want to spend money on a plant-based milk to make one or two pies.

Ingredients
- 2 15oz pumpkin puree or use one large 29oz can
- 1 1/2 cups brown sugar
- 2 tsps cinnamon
- 1 tsp cloves
- 2 tbsp Tapioca Starch
- 1 cup Old Fashioned oatmeal Grind oats in blender
- 2 cups plant-based milk or water almond milk, cashew milk, etc.
- 2 large deepdish pie crusts keep pie crusts frozen until filling is made)
