Pineapple Upsidedown Cake
This cake was easy to make in our vacation condo. We used what we had left for groceries. There were only seven ingredients in it. The ingredients were flour, sugar, baking powder, pineapple juice, cinnamon, coconut milk and pineapple slices. You may need some cooking spray or coconut oil to rub on the inside on the pan to prevent the cake from sticking.
Ingredients
- 1 cup all purpose flour
- 1/2 cup white sugar
- 1 tbsp Baking Powder
- 1/2 cup pineapple juice
- 1/2 teaspoon cinnamon
- 1 1/2 cups coconut milk
- 1 can pineapple slices
Instructions

Preheat oven to 350°F.

Spray oil or apply oil to the bottom of the pan. Cover the bottom with pineapple rings/chunks.

Mix dry ingredients in a small bowl.

If you have a second bowl, mix 1.5 cups of coconut milk and 1/2 cup pineapple juice together, then add dry ingredients, stirring until combined.

Pour batter over pineapple then bake 40 minutes or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes then flip upside down on a wide cutting board or large plate. Serve immediately or cool completely then serve.
