I like baked beans with a variety of spices and less sweet than the traditional vegetarian beans at the store. I use small amounts of cumin, chili powder, nutmeg, cinnamon and salt. You can omit cumin, nutmeg, cinnamon and some other spices if you don’t have them. Stock up on spices you can buy at the dollar store.
Always use fresh white or yellow onions and garlic from the grocery store or farmers market. I usually use regular brown sugar or dark brown sugar. There are a few condiments that I buy such as yellow mustard that we keep in our refrigerator most of the time. We rarely use horseradish sauce in our house. It’s best to only buy horseradish right before you make it. Some people like to add a bit of molasses to their baked beans. If you can get a good deal on fresh tomatoes you make them into a tomato sauce and use them in your beans. It is quick and easy to use tomato paste since we can buy a box of cans from Costco.
Vegan Baked Beans
- 1 cup navy beans
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cinnamon
- 1 small onion
- 1 clove garlic
- 1/2 cup brown sugar
- 1/2 teaspoon horseradish sauce
- 2 Tbsp tomato paste
- 1 teaspoon yellow mustard
- 1/2 cup water (enough water to cover the beans)
Put dry navy beans in a pressure cooker. Add water until it is double the height of your beans. Get the beans to a boil, turn off and let soak for an hour. Strain and rinse the beans. Put the beans back in the pressure cooker, sprinkle some salt in it and simmer for an hour.
Let the beans cool down in the pressure cooker before opening. Drain the cooked beans in heat resistant strainer. Put the beans in a small crock pot or slow cooker. Pour enough water in your pot to cover the beans.
Stir in spices, tomato paste, onions, garlic, mustard, horseradish and brown sugar with the beans and water. Cooking the beans can take several hours. You can reduce your cooking time if you saute diced onions and sliced or minced garlic before adding them to your slow cooker. Set the temperature to the lowest setting on your crock pot or slow cooker. Let it slow cook for two to three hours.
This is a small batch of baked beans. You can vary the spices each time you make it. Some people may prefer to use garlic powder and dried onions to make baked beans. Others may not want to put garlic, onions and horseradish in baked beans. Do what makes your taste buds happy.
